Jack Rabbit's is a gourmet burger and hot dog restaurant chain headed by Jack Rabbit's creator, chef and restaurant owner, Jack Flaws, who is among New England’s top chefs.

Jack is a Culinary Institute of America trained executive chef who began his career at Trump’s Taj Mahal in Atlantic City. His next position was at Vail’s premier French restaurant, The Left Bank. He then returned east to Manhattan’s Symphony Café with famed chef Neil Murphy followed by successful stints as an executive chef at the acclaimed Three Fish Restaurant in Westerly, RI; Prezzo in New Canaan, CT; and Connecticut’s famous Max Downtown.

Each stop along the way expanded his skills and fueled his passion for food preparation and the restaurant business, positioning him to create his own Jack’s Saybrook Steak, a premier steak and chop house; Harbor One Dragon Dogs, a seasonal hot dog stand, as well as the original Jack Rabbits, all in Old Saybrook, CT. With Jack Rabbits, Jack has created a casual family restaurant that provides a gourmet culinary experience serving burgers and hot dogs, as well as “dirty wings” and a range of salads and appetizers. Each offering is an imaginative combination of ingredients creating tastes to savor and crave at affordable prices. The dining experience is enhanced by the “retro” seating and the 1950’s décor that steps back to an earlier more relaxed time, reminiscent of “Shake shops” and “juke boxes”. And, for those customers who prefer to stay with the frenetic pace of the digital age, every Jack Rabbits will provide take-out and delivery service.
